Beef Curry with a Lime and Ginger Raita

Kofta is a Middle Eastern dish which is usually made with either lamb or beef. In this recipe I will be using some fillet beef.  Not all curries have to cook for hours and hours, this is fast, tasty and easy to do! For the beef I would recommend using a prime cut of beef i.e. fillet or sirloin as they are the most tender when cooking a fast dish! Pre adding the spices to the meat will give it a deeper and more complex flavour but if you don’t have the time don’t worry, it is just an extra step in building the flavour!
