Full Irish Sausage Rolls
These sausage rolls are so easy to make and really tasty! They are a welcome change from pork and the sweetness of the tomato really sets it off. If you would like to serve these with some relish and peppery rocket they would be fab!

Makes 8 pieces
Ingredients
- 1 x roll of puff pastry
- 1 x egg
- 6 x turkey sausages
- 2 x pieces of turkey pudding
- 2 x turkey rashers
- 6 x button mushrooms
- 2 x beef tomatoes
- 1 x red onion
- 4 x cloves garlic
- Chopped parsley
- Sea salt & black pepper

Method

Preheat your airfryer/ovenĀ to 160 degrees celsius.

Chop all your ingredients

In a bowl mash your sausages and add in your onion, garlic, tomato, pudding, parsley and rashers. Season.

Roll out your pastry and place your mix in the centre and roll both sides in.

Slice 8 x pieces and whisk your egg and brush on the top, sides and bottom of the pastry.

Season with sea salt and place in the airfryer. If you are placing it in the oven, layer your tray with parchment paper and after 10 minutes flip your sausage roll so that it cooks evenly!Serve and enjoy!
