Mixed leaf salad with Jack McCarthy’s black pudding

Jack McCarthy’s black pudding is top class. It is an award-winning black budding so much so that it is celebrated by the Knights of Black Pudding in France! Today I will be using some very simple ingredients and as the whispers of Summer are coming in it will be a divine salad that you can whip up on the warmer evenings! Nothing says Cork more than a trip to the English Market!

Ingredients

  • 200g black pudding
  • 4 x smoked rashers
  • 200g mixed leaves (rocket, spinach, kale, chard)
  • 1 x red onion sliced
  • 1 x apple sliced
  • 50g soft cheese like feta or goat’s cheese
  • 1 x beetroot diced
  • 1 x poached egg on top

Dressing

  • 30 ml olive oil
  • 10g wholegrain mustard
  • 10 ml white wine vinegar
  • Salt and Pepper

Method

  1. For your dressing mix all your ingredients together.
  2. Boil a pot of water, add in a drop of vinegar, swirl the water and pop your egg in from a cup.
  3. Chop up your pudding and your bacon and fry gently in a pan.
  4. In a bowl mix your leaves, cheese, red onion , apple and beetroot.
  5. Add your dressing,
  6. Serve in a bowl and place your pudding and egg on top!
